Arctic Boy has an allergy treatment for eggs/chicken/feathers/poultry today (do an internet search for NAET if you are curious). He will have to avoid these substances for 25 hours which isn’t very long, but he leaves for a two-day FFA event before the 25 hours will be up, so I tracked down this recipe, which upon testing was atrociously unacceptable, and tweaked it quite a bit, thinking he might like to take along a treat. Now the recipe is good, but does not much resemble the original. Still, cookies with eggs are better, in my opinion. At any rate, if you can’t have eggs, this recipe is better than anything else I found on the internet.
Eggless Cookies
- 1 cup butter
- 1 cup organic sugar or sucanat
- 1 tsp vanilla
- 1 1/2 Tbsp water
- 2 cups flour
- 3/4 tsp baking powder
- 1/8 tsp salt
Cream TO DEATH the butter, sugar, vanilla, and water. It should be unbelievably fluffy. Add dry ingredients. Toss in some chocolate chips or nuts if you want. Bake at 375 for about 12 minutes. These cookies are soft, but brittle. Allow them to cool completely before you try to pick one up.

Aubrey uses flaxseed as a straight across substitute for eggs in everything, except fried or scrambled eggs, obviously. 😋
1Tbl. Flaxseed + 3 Tbl. water per egg. Seems like a lot of extra water, but it works every time!

I think I’ve heard of that, but of course, when you most need to remember these little tidbits, is when you tend to forget. I’ll have to give it a try sometime.
